ZATAAR OIL HASHBROWNS WITH A POACHED EGG

Serves 2, Prep time: 25 minutes, Cooking time: 20 minutes.


Ingredients:
2 Large potatoes
1 Onion or 4 shallots
1 tsp Paprika
1 Egg
1 tbsp Zaatar
Salt and pepper
Extra virgin olive oil

Method:
1. Peel the potatoes and then grate the potato and onion into a large bowl. (If you are using shallots slice them very finely instead)
2. Put the grated potato and onion into a muslin bag or tea towel and squeeze out all the juices.
3. Place back in the bowl, add the paprika, salt and pepper. Mix well.
4. Add the egg and beat it into the mixture.
5. Put oil into a frying pan on a medium heat. When the oil is hot, mould the potato mixture into a round shape and place in the pan. Allow to cook for 4 minutes on each side.
6. To make the zaatar oil, simply mix 1 part zaatar with two parts extra virgin olive oil.
7. When the hash browns are golden and crispy on both sides, serve and drizzle the zaatar oil over them.
