ZATAAR AND HARISSA ROASTED PUMPKIN
Serves 4, Prep time: 25 minutes, Cooking time: 40 minutes.
Ingredients:
1/2 Pumpkin, seeds removed, peeled and chopped into bite size pieces
1 tbsp Harissa
1 and 1/2 tbsp Zataar
1/2 Lemons juice
1 tbsp Yogurt
A small handful of chopped parsley
Extra virgin olive oil
Salt and pepper
Method:
Pre-heat your oven to 200 degrees Celsius.
Drizzle a baking tray in oil and mix the pumpkin into it.
Season the pumpkin with salt and pepper. Add the harissa and zataar and make sure the pumpkin is evenly covered.
Place the baking tray into the oven and cook for 35-40 minutes (until pumpkin has softened).
Serve the pumpkin and drizzle with yogurt, parsley and olive oil.
