TOMATO AND WHIPPED RICOTTA SALAD
Serves 4, Cooking Time: 20 mins
Ingredients:
5 Large tomatoes (a mixture of colours if possible)
150g Ricotta
Half a lemons zest
A small handful of fresh basil, roughly chopped.
Salt
4 tbs Extra virgin olive oil
Method:
1. Thickly slice the tomatoes and place on your serving platter.
2. In a food processor place the ricotta, lemon zest, 2 tbs olive oil and salt to taste. Whip until the ricotta is airy.
3. Spoon the ricotta in blobs on top of the tomatoes.
4. Drizzle over the rest of the olive oil, basil leaves and some salt to taste.
