THE BEST PASTA SALAD

Serves 4, Prep time: 20 minutes, Cooking time 1hr 15 minutes.

Ingredients:

400g tufoli or penne pasta

700g cherry tomatoes, halved

100g kalamata olives pitted and halved

2 balls of mozzarella, chopped

A large handful of basil, roughly chopped

4 large garlic cloves, halved

Extra virgin olive oil

Parmesan

Salt and pepper

Method:

  1. Place olive oil, garlic, cherry tomatoes, kalamata olives, mozzarella, basil, salt, and pepper in a serving bowl. Allow to marinate for at least 1 hour in the fridge (the longer the better).

  2. Every 15 minutes make sure to re-mix the ingredients.

  3. Generously salt a pan of water and heat on a medium flame. When the water has come to the boil add the pasta and cook until al dente.

  4. When the pasta is cooked through, drain and add it to the marinating ingredients.

  5. You can serve this hot or cold just make sure to remove the garlic cloves just before serving and top with more fresh basil and grated Parmesan.
