SWEETCORN RIBS WITH A ZAATAR CRUST
Side dish, serves 4. Prep time: 15 minutes, Cooking time: 30 minutes
Ingredients:
2 corn on the cob
2 tsp Zaatar
1 tsp Aleppo chilli flakes
1/2 tsp sumac
1/4 cinnamon powder
Salt and Pepper
Extra virgin olive oil
Method:
Pre-heat the oven to 180 degrees Celsius.
Par-boil the corn on the cob so they are just softened.
Allow the corn to cool a little and cut them into quarters.
In a small bowl mix all the spices with salt and pepper and a generous glug of olive oil.
Rub the spice mix into the corn and place on a baking tray.
Roast for 20 minutes, until softened and crispy.
Place on a serving plate and drizzle on some oil and sprinkle over some zaatar.
