SQUID AND BORLOTTI BEAN SPAGHETTI

Serves 2, Prep Time: 15 minutes, Cooking Time: 30 minutes.


Ingredients:
2 garlic cloves, sliced
1/2 red onion, sliced
1/2 scotch bonnet, finely chopped
1 tsp chopped capers
2 anchovies fillets
6 kalamata olives, finely chopped
1/4 tsp chilli flakes
1 tin borlotti beans
1 large squid fillet sliced
Small handful of fresh basil
Small handful of fresh parsley
1/2 lemons juice and zest
200g spaghetti
Extra virgin olive oil
Table Salt and flakey salt

Method:
1. In a large pan, add water and a generous amount of salt and heat on a high heat for the spaghetti.
2. Drizzle olive oil into a frying pan and add in the garlic, onion and scotch bonnet. Fry on a low heat and stir occasionally.
3. When the onion, garlic and scotch bonnet have crisped up, add in the capers, olives and anchovies. Mix everything together and allow the anchovies to melt into the ingredients. When this has happened add in the borlotti beans, incorporate everything well.
4. Your spaghetti water should be boiling, so add in the pasta and cook until al dente.
5. Meanwhile add in the squid and basil. Don’t stir too much to allow the squid to brown and crisp.
6. Reserve a mug full of pasta water and add your pasta to the frying pan along with enough water to make it saucy ;)
7. Top with fresh parsley, lemon zest, juice, chilli flakes and season with flakey salt.
