SARDINES ON TOAST WITH A GARLIC AND CHILLI BUTTER

Serves 2, Prep time: 5 minutes, Cooking time: 15 minutes.

Ingredients:

2 Slices of good quality toast

1 Tin of sardines

8 Cherry tomatoes

½ Fresh chilli, sliced

1/2 Lemon’s zest

1 Garlic clove, sliced

10g Unsalted butter

1 tbs Extra virgin olive oil

Salt and pepper

 Method:

  1. Pre-heat your oven to 200 degree Celcius.

  2. In a baking tray place the cherry tomatoes and cover in olive oil. Bake for 10-15 minutes until softened.

  3. In a frying pan melt the butter and add in the chilli, garlic and half a lemons zest. Fry on a low heat until the garlic is golden.

  4. Toast your bread. Top with the roast tomatoes, make sure you squish them so the juices seep into the toast. Then place the 2 sardines on top and drizzle on the flavoured butter.
