SARDINES ON TOAST WITH A GARLIC AND CHILLI BUTTER
Serves 2, Prep time: 5 minutes, Cooking time: 15 minutes.
Ingredients:
2 Slices of good quality toast
1 Tin of sardines
8 Cherry tomatoes
½ Fresh chilli, sliced
1/2 Lemon’s zest
1 Garlic clove, sliced
10g Unsalted butter
1 tbs Extra virgin olive oil
Salt and pepper
Method:
Pre-heat your oven to 200 degree Celcius.
In a baking tray place the cherry tomatoes and cover in olive oil. Bake for 10-15 minutes until softened.
In a frying pan melt the butter and add in the chilli, garlic and half a lemons zest. Fry on a low heat until the garlic is golden.
Toast your bread. Top with the roast tomatoes, make sure you squish them so the juices seep into the toast. Then place the 2 sardines on top and drizzle on the flavoured butter.
