PROSCIUTTO AND COURGETTE RIGATONI

Serves 2, Prep time: 15 minutes, Cooking time: 20 minutes.


Ingredients:
200g Rigatoni pasta (spaghetti also works beautifully)
1 Yellow courgette, grated
1 Green courgette, grated
4 Prosciutto slices, roughly chopped
A handful of basil, chopped
A handful of parmesan, grated
Extra virgin olive oil
Salt and pepper

Method:
1. Place water and a generous helping of salt to a large pan and place on a medium heat.
2. In a frying pan add a drizzle of oil and your grated courgette. Season and cook on a low to medium heat for 7- 10 mins until the courgette has softened.
3. When the pan of water has started to boil add your pasta.

4. Cook your pasta until al dente and reserve a mug full of the pasta water.

5. Drain the pasta and add it to the courgette pan with the basil, prosciutto and mug of pasta water. Cook everything together for around 3 minutes.
6. Serve and top with Parmesan and more fresh basil.
