PRAWNS ON TOAST TOPPED WITH WHIPPED FETA

Serves 2.

Ingredients:

2 slices of sourdough bread

200g raw and peeled prawns,

100g feta

2 tablespoon of labna or cream cheese

2 garlic cloves, minced

half a preserved lemon finely chopped

1 tsp paprika

1 tap smoked paprika

A small handful of fresh chopped chives

A nob of unsalted butter

Extra Virgin Olive Oil

Salt and pepper

Method:

  1. Place the feta in a high-speed blender and blend for a minute until the feta has crumbled. Add in your labna or cream cheese and blend for 3-4 mins until the mixture is whipped and smooth.

  2. Heat up a drizzle of olive oil in a frying pan. Add in your garlic and preserved lemons. Fry on a low heat until the garlic has softened.

  3. Add in the prawns and paprika and mix everything in together.

  4. When the prawns turn pink add the nob of butter. Turn the heat off when the butter has melted.

  5. Toast your bread.

  6. To serve, place the prawns on the toast, top with a small dollop of whipped feta, drizzle olive oil, sprinkle some more paprika and chopped chives.
