POTATO AND SAMPHIRE SALAD
Serves 4, Prep time: 20 minutes, Cooking time: 30 minutes.
Ingredients:
8 New potatoes, halved
200g Samphire
2 tbsp Mayonnaise
2 tsp Dijon mustard
1 tbsp Extra virgin olive oil
1/2 a lemon’s juice
A large squeeze of orange juice
2 Mashed anchovies
1 Garlic clove, minced
Salt and pepper
Method:
1. Boil the potatoes until just soft.
2. Meanwhile in a frying pan add a splash of olive oil, the garlic and the samphire and cook on a low heat for around 5 minutes until the samphire is softened.
3. In a mug mix together the mayonnaise, mustard, anchovies, lemon juice, olive oil, orange juice, salt and pepper.
4. Drain the potatoes and place in serving bowl along with samphire and dressing. Mix well and serve.
