POLENTA TOPPED WITH GRILLED VEGETABLES

Serves 2, Prep time: 20 minutes, Cooking time: 25 minutes.

Ingredients:

1 Red pepper, sliced

4 Asparagus, halved horizontally

1 Onion, cut into wedges

4 garlic cloves, crushed

1/2 cup Polenta

1/2 tsp Nutmeg

Extra virgin olive oil

2 Knobs of butter or vegan butter

A sprig of fresh thyme

A small handful of fresh chives

Salt and pepper

Method:

  1. Heat up some olive oil in a griddle pan and place the vegetable onto it. Grill the vegetables until softened and both sides are charred.

  2. Boil 2 and a quarter cups of water in a pan, when it is boiling add salt and a knob butter. When the butter melts slowly add the polenta constantly whisking to remove any lumps.

  3. Season to taste and add nutmeg, another knob of butter and keep stirring. You should cook the polenta for around 8 mins until thick and creamy.

  4. Serve and place the grilled vegetables on top. Drizzle oil and scatter the fresh thyme and nutmeg.
