MUSHROOMS ON TOAST WITH A TAHINI AND YOGURT SAUCE
Serves: 2 Time: 20 minutes
Ingredients
2 Shiitake mushrooms
1 Portabello mushroom
4 Chestnut mushrooms
1/2 Fresh red chili
4 Cloves of garlic
1/2 Limes juice
2 tbsp Yogurt
1 tbsp Tahini
2 Slices sourdough bread
A handful of finely chopped chives
Olive oil
Nob of Butter
Salt and pepper
Method
Finely slice all the mushrooms, garlic and chilli.
In a pan heat up a drizzle of oil and the butter and fry the mushrooms, garlic, and chilli over medium heat. Once everything has browned and softened, remove from the heat and season to taste.
Mix together the yogurt, tahini, and lime juice. Season with some salt.
Toast the bread. Spread a layer of the yogurt tahini sauce and then top with the mushrooms and sprinkle on chives.
