MUDARDARA (MAJ-ED-ERRA)

Serves 2, Prep time: 20 minutes, Cooking time: 1 hour 20 minutes.


Ingredients:
110g Lentils, washed and drained
110g White rice, washed and drained
1 Red onion, finely sliced
1 White onion finely sliced
Extra virgin olive oil
Salt and pepper

Method:
1. Boil the lentils in salted water for around 25 minutes (until they are soft).

2. In the meantime fry the onions in olive oil until they are caramelised.

3. Drain the lentils and add them back to the pan, add most of the onions (leaving some to serve on top) and the rice.

4. Add 140ml water to the pan, season and mix everything together.

5. Wait for the water to come to the boil, simmer for 4 mins then turn the heat off and cover the pan with a clean tea towel and pan lid.

6. Leave to steam for 25 mins.

7. Serve topped with the rest of the caramelised onions.
