LEMON TZATZIKI
Serves 4. Time: 20 minutes
Ingredients:
500g Greek yogurt
3 tbs olive oil
1 lemons zest
1/2 a lemons juice
1/2 a cucumber
1 garlic clove, minced
A small handful on mint finely chopped
Method:
Grate the cucumber and place it into a Muslim cloth or tea-towel. Squeeze out all of the water from the cucumber.
Place the yogurt, olive oil, lemon juice, half of the lemon zest, drained cucumber, minced garlic and most of the mint into a bowl and season. Mix well.
Serve in a nice bowl and top with the rest of the mint, lemon zest and a drizzle of olive oil.
