LEBANESE FRY-UP
Serves 1, Prep time: 10 minutes, Cooking time: 25 minutes.
Ingredients:
4 New potatoes
1/2 tsp Sumac
1/2 tsp Mustard seeds
1/2 tsp Smoked paprika
1 Egg
Salt and pepper
Olive Oil
A small handful of fresh coriander or parsley (optional)
Method:
1. Wash and chop the potatoes into cubes with the skin on and par-boil until just soft.
2. In a pan heat a generous amount of olive oil and put in spices, after 30 seconds (when mustard seeds start popping) add potatoes and season to taste. Mix everything together well. Cook the potatoes until crispy and browned.
3. When the potatoes are ready, remove them from the pan and place them onto your plate. Crack an egg in the same frying pan and then place on top of the potatoes when it’s ready.
4. Sprinkle with fresh coriander or parsley and serve.
