HARISSA AND FETA PANTRY PASTA
Serves 2, Prep time: 15 minutes, Cooking time: 25 minutes.
Ingredients:
1 Onion, finely sliced
2 Garlic cloves, finely sliced
4 tsp Harissa
1/2 Tube of tomato paste
100g Feta
200g Spaghetti
Salt and pepper
Method:
1. Finely slice your onion and garlic, and fry on a low heat until softened.
2. Fill a large pan with water and generously salt and place on a medium heat.
3. Once the onion and garlic have softened add the harissa and tomato paste. Fry everything until it is a thick paste. Then turn off the heat.
4. Once the water is boiling add the spaghetti, make sure to move the spaghetti about frequently to stop any clumping together. Once the spaghetti is al dente turn off the heat and reserve a cup of pasta water.
5. Turn the heat back on for the frying pan to a medium low flame. Add the feta. Then add the pasta water.
6. Mix together until the feta has melted and the sauce is creamy. Add in the spaghetti. Season to taste. Toss everything together so the sauce coats the pasta.
6. Top with Parmesan or more crumbled feta.
