GRILLED PEACH, YOGHURT AND ROAST TOMATO TOAST

Serves 2, Prep time: 5 minutes, Cooking time: 10 minutes.

 Ingredients:

2 Slices of good quality bread

2 tbs Greek yogurt

1 Peach cut into wedges

8 Cherry tomatoes

2 Tsp runny honey

2 Sprigs of thyme

Flaky Salt

1 Tbs olive oil

 Method:

1.  Pre-heat the oven to 200 degrees celcius.

2.  Place the tomatoes in a baking tray and cover in oil and bake for 10-15 minutes or until softened.

3.  Heat a griddle pan and cook the sliced peach for around 2 minutes on each side or until there are griddle lines.

4.  Toast the bread

5.  Spread a tablespoon of Greek yogurt onto each slice of toast. Place the peach slices on top. Then drizzle 1 tsp of honey, sprinkle on thyme and top with flaky salt. Finally, top with the roast tomatoes.
