Gluten Free Chocolate and Amaretto Almond Cake
Makes 15. Prep time: 30 mins. Cooking time: 1 hr 20 mins.
Ingredients:
150g Dark chocolate
125g Unsalted butter, softened
175g Ground Almonds
3 tbsp Icing sugar + extra for serving
5 Eggs, separated
100ml Amaretto
2 tbsp Sunflower oil
100ml Double cream
Method:
Pre-heat the oven to 150 degrees Celsius or gas mark 2.
On a low heat melt the butter and chocolate over a bain-marie in a large bowl.
Let the mixture cool.
Whisk the egg whites in a medium sized bowl until they have stiff peaks.
In another medium sized bowl mix the icing sugar and almonds together and add to the melted chocolate and butter.
Next add in the egg yolks and amaretto. Mix well so everything is incorporated evenly.
Fold in the egg white with a metal spoon until evenly mixed.
Oil a square baking tray and pour in the mixture.
Bake for 50 minutes.
Turn up the oven to 160 degrees Celsius or gas mark 3 and bake for 15 minutes.
Turn down the oven to 150 degrees Celsius or gas mark 2 and bake for 10 minutes
Turn the oven back up to 160 degrees Celsius or gas mark 3 and bake for a final 5 minutes.
Leave the cake to cool, slice into even squares. Serve with sieved icing sugar and double cream.
