DELICIOUS MEZZE BOARD

Serves 2, Prep time: 10 minutes, Cooking time: 15 minutes.

Ingredients:
1/2 Courgette, thinly sliced length ways
Kalamata olives
Nocellara olives
4 Slices of proscuitto
6 Slices of salami
4 Mini buffalo mozzarella balls
1 Fig
5 Sundried tomato’s
5 Marinated artichokes
5 Cherry tomatoes
Extra virgin olive oil
Red pepper flakes
Salt

Method:
1. In a griddle pan fry the sliced courgette in some extra virgin olive oil. Leave for 2 minutes on each side so until they are soft and have beautiful griddle marks.
2. On a chopping board start assembling everything. I put the olives in little bowls, half-cut the fig into quarters so it opened into a flower, and ripped open the mozzarella balls. Get creative.
3. Once everything is plated drizzle your mozzarella and fig with olive oil and salt and sprinkle chilli flakes over the mozzarella.
