CRISPY BRAISED BEEF TUFOLI
Serves 2-4, Prep time: 20 minutes, Cooking time: 40 minutes.
Ingredients:
400g Tufoli or penne pasta
700g Minced pork or beef
1 tsp Chilli flakes
A large bunch of parsley, finely chopped
1 Red onion, finely chopped
2 Garlic cloves, minced
1 Lemons zest
1 Large glass white wine
Extra Virgin olive oil
Salt and pepper
Method:
Put onion and garlic into a pan with olive oil and fry until softened.
Add your mince to the pan and leave to sit for 4 minutes to encourage browning. Try not to stir the meat much so that it browns well.
Fill a large pan with water and 2 tablespoons of salt (seasoning pasta water is so important) when it starts to boil add the pasta and cook until al dente.
Meanwhile add the chilli, most of the lemon zest, most of the parsley and white wine to the meat.
When the pasta is cooked save a small mug worth of the pasta water to the meat and then add your drained pasta.
Cook everything together for 5 minutes.
Top with the rest of the fresh parsley and lemon zest.
