CAPRESE SALAD
Serves 2, Cooking time: 20 minutes.
Ingredients:
1/2 Cantaloupe melon, cubed
7 Kalamata olives, pitted and halved
10 Cherry tomatoes, halved
4 Slices of prosciutto, ripped into smaller pieces
A ball of mozzarella, ripped up
A handful of basil
Extra virgin olive oil
Salt and pepper
Method:
1. In a bowl first place the cantaloupe, then tomatoes and prosciutto, followed by mozzarella and olives.
2. Top with the basil leaves, a generous drizzle of olive oil and salt and pepper.
