CANNELLINI BEAN, TUNA AND RED ONION SALAD

Serves 4, Cooking time: 15 minutes.

Ingredients:

1 Can tinned tuna

50g Cannellini beans

1/2 White or red onion, finely sliced

8 Kalamata olives, sliced

A Small handful of chopped basil

1/2 a Lemons juice

Extra virgin olive oil

A large pinch of chilli flakes

Salt and pepper

Method:

  1. In your serving bowl place the sliced onion, chilli flakes and a generous amount of olive oil.

  2. Allow the onion to sit in the olive oil for 15 mins minimum so they soften.

  3. Then add all of the other ingredients, mix, adjust the seasoning and serve.
