BEETROOT RAITA

Serves 4, Time 20 minutes.

Ingredients:
5 raw beetroot
6 tbs plain yogurt
1 small garlic clove crushed
2 tsp ground cumin
1 tsp sugar
2 tsp salt


Method:

  1. Grate the beetroot into your serving bowl.

  2. In a small frying pan, roast the cumin until it has a nutty smell. This takes about 1-2 minutes, just make sure to keep it moving.

  3. In a separate bowl mix together the yogurt, cumin, garlic, salt and sugar.

  4. Add the yogurt mixture into the beetroot. Combine everything thoroughly.

  5. Finally, taste the raita and adjust any seasoning to your preference.
