BAKED SEABASS WITH CHICKPEA MASH

Serves 2, Prep time: 1hr 30 minutes, Cooking time: 15 minutes.

Ingredients:

2 Sea bass fillets

1 tsp Paprika
1 Lemon’s juice and zest
1 Garlic clove
Extra virgin olive oil
Salt and pepper
1 Tin of chickpeas
50ml Vegetable stock
3 Rosemary sprigs
4 Bay leaves

Method:

  1. In a small bowl mix together the paprika, a generous drizzle of oil, lemon zest, salt and pepper.

  2. Place the sea bass in a baking tray and pour over paprika mixture. Then place bay leaves and 2 sprigs of rosemary over the fish and rub everything into the fish equally.

  3. Place in fringe for half an hour to marinate.

  4. In a blender place the chickpeas, garlic, 1 rosemary sprig, veg stock, a little olive oil, half a lemons juice, salt and pepper and blend until smooth.

  5. Heat your oven to 200 degrees Celsius.

  6. Remove the sea bass from the fridge and roll up that the skin is on the inside. Place back in the baking tray and bake for 10-12 minutes.

  7. While the fish is cooking heat the chickpea mash in a saucepan.

  8. To serve, spoon the mash onto a place and top with the fish making sure to drizzle the juices on top.
