THE PERFECT BAKED POTATO WITH ANCHOVY BUTTER

Serves 2, Prep Time: 15 minutes, Cooking time: 1hr 30mins

Ingredients:
2 baking potatoes
50g grated cheddar cheese
2 tbs plain yogurt
50g unsalted butter
2 salted anchovy fillets
A pinch of Chilli flakes (optional)
Extra virgin olive oil (optional)
Salt and pepper

Method:
1. Preheat your oven to 200 degrees Celsius.
2. Place the potatoes on a skewer and bake in the oven for 1 hour 30 minutes. They should be crisp on the outside and fluffy on the inside.
3. While the potatoes are cooking make the anchovy butter. To do this mash the butter with a fork to soften it. Then mash the anchovies and incorporate them into the butter. Add a small sprinkle of salt and mix everything well. (This is done best on a chopping board) Mould the butter into a cylinder shape using cling film and store in the fridge to harden while the potatoes are baking.
4. When the potatoes are ready, cut them in half, add the anchovy butter and mix it into the flesh. Top with grated cheddar and yogurt. A drizzle of olive oil and sprinkle of chilli flakes on top is delicious addition.
5. Serve with a green salad and Dijon mustard.
