BABAGHANOUSH

Serves 4, Prep Time: 10 minutes, Cooking time: 30 minutes.

Ingredients:
3 aubergine
A handful parsley, finely chopped + extra for the topping
1 1/2 lemons juice
2 garlic cloves, minced
1 1/2 tablespoons tahini
A small handful of pomegranate seeds (optional)
A small handful of Pistachios (optional)
Extra virgin olive oil
Salt and pepper


Method:

  1. Place your aubergine in a pan under the grill for 15 mins on each side or until blistered and soft.

  2. Meanwhile in a medium sized mixing bowl, add the parsley, lemon juice, tahini, garlic, a generous drizzle of oil and some salt and pepper. Mix everything together.

  3. When the aubergine is ready, remove the skin and mash the flesh.

  4. Add it to the tahini mix and combine everything well.

  5. Season to taste.

  6. Serve in a pretty bowl and top with a few pistachios, pomegranate seeds and a sprinkle of parsley.
