SMOKED MACKEREL PATÉ

Serves 4. Time: 30 minutes.

Ingredients:

2 smoked mackerel fillets

3 tbs yogurt

1 gherkin, finely chopped

1 shallot, finely chopped

1 lemon’s juice and zest

A small handful of fresh parsley, finely chopped

salt and pepper

Method:

  1. Remove mackerel skin and place the fillets into a medium sized bowl. Mash them with a fork.

  2. To the mackerel add the yogurt, gherkin, shallot, lemon’s juice, 1/2 the lemon’s zest, salt and pepper. Mix thoroughly.

  3. Season to taste.

  4. Serve into a nice bowl and top with parsley and lemon zest.
